Turkey Hummus Quesadillas

I’ve really grown an appreciation for hummus this year. There are so many different ways to make it, eat it, and enjoy it. It’s pretty healthy, and there are many great things to pair it with. As I mentioned in my last food post, I’ve been on the search to add one healthy recipe  we really, really like at my house to my arsenal per month. This recipe made the cut! I like that it’s easy to add or take away the cheese, depending on how healthy I want to make it. It’s good, filling, and easy to change up to make it unique and interesting, each time I make it.

Turkey Hummus Quesadillas
A fresh, healthy, and satisfying quesadilla, super quick and easy to whip up!

Ingredients
  1. Ground turkey
  2. Wheat tortillas
  3. Eggs
  4. Hummus
  5. Red onion
  6. Tomato
  7. Avocado
  8. Cheddar
Instructions
  1. Cook one pound ground turkey in one cup of water. Add spices as desired (I enjoy using Mexican seasonings and onion salt).
  2. Cook eggs- you can choose to add to ground turkey or cook separately to create different flavors.
  3. Spread hummus over one side of tortilla.
  4. Add cooked ground turkey and eggs to half the tortilla; top with tomato, onion, avocado, and cheddar as desired.
  5. Fold and enjoy!
