Crockpot Chicken, Kale, & Quinoa

Today, I just had to share this meal with you- it is one of our very favorite meals in our home. It’s fast, it’s easy, it’s wholesome, and it is GOOD. 

Who doesn’t love a good slow cooker meal? If you don’t have a slow cooker, I highly recommend this beautiful Crockpot that I’ve loved using over the last few years!

I originally found this recipe for chicken at 100 Days of Real Food. When a recipe is great, there is no need to mess with it! The author suggests keeping the bones to make homemade stock, but we eat the bones in this house. Otherwise, we have made extremely minute changes as the recipe is just fantastic as-is.

Next, pair it with some great sides. I love my recipe for kale- it’s delicious, so quick, and so yummy! As someone who grew up hating green food, kale has totally changed my mind about leafy greens. Add quinoa to the mix, and you just can’t go wrong (in my biased opinion, haha). I love the protein benefit from quinoa that doesn’t come with traditional rice, and I feel much better after eating it, as well (no bloating!). 

Check out these three recipes and take the time to prepare this incredibly easy meal. Prep time for all three parts of this meal adds up to just about 15 minutes, and you really can’t ask for more than that for a wholesome meal. Now I’m hungry for the leftovers in our fridge!

An easy and delicious crockpot chicken meal, utilizing a whole chicken and cooking it to fall-of-the-bone perfection.

Ingredients
  1. 1 3-4 pound chicken
  2. 1 onion, diced
  3. 2 teaspoons smoked paprika
  4. 1 teaspoon salt
  5. 1 teaspoon onion powder
  6. 1 teaspoon thyme
  7. 1/2 teaspoon garlic powder
  8. 1/4 teaspoon cayenne (red) pepper
  9. 1/4 teaspoon black pepper
Instructions
  1. Place diced onions in the bottom of your slow cooker.
  2. Place chicken on top of the layer of onions in slow cooker (don't forget to remove innards).
  3. Combine the herbs and spices in a small bowl and proceed to rub down chicken with the mixture. Adding some of the mixture to the cavity of the chicken brings out a great flavor!
  4. Cook on high for 5-6 hours for maximum tenderness. There is no need to add any liquid.

Ingredients
  1. Fresh kale
  2. Seasoned salt
  3. Garlic powder
  4. Onion powder
  5. Water or *broth (see Notes)
Instructions
  1. Add desired amount of kale to small pot.
  2. Turn heat to medium.
  3. Pour enough water or broth in the bottom of the pan to come up about a half-inch.
  4. Add seasonings to taste. (I recommend a healthy shake of each)
  5. Allow to cook for 12-15 minutes, until tender. Cover as needed.
  6. When the broth is absorbed and there is no longer standing liquid in the pan, your kale is ready!
Notes
  1. I like to boil chicken in water and save the "broth" made from doing so, to use in recipes- it adds a wonderful flavor and is a healthy option!

 Follow the instructions on your package of quinoa as you cook it. You can cook on the stovetop or in a steamer! I also find it a nice change to use my above-mentioned broth in place of water, when making quinoa, from time to time. 

As the chicken cooks, it creates it’s own liquid that I love to douse my quinoa in (as you can see from the bottom picture in the title graphic) for some added flavor.
