The Kale You Didn't Know You'd Love

Growing up, salad was something I just couldn’t abide.  Unless it was iceberg drenched in ranch, it wasn’t going to happen. Do you relate?  In the past few years, I’ve finally acted like a big girl and at least tried those things I was convinced I didn’t like… and I’m so glad I did! Today, I want to share with you 3 salads that I – a recovering salad hater – love. 

This first one, Lemon & Sprouts Chopped Kale Salad, is a copy cat of my favorite salad kit (which, sadly, I can no longer find in stores). It’s a great, crunchy, fresh, and sweet mix of kale, shaved brussel sprouts (trust me on this one!), thinly sliced carrots, and almonds, along with a light sprinkle of cheese (I use mozzarella) and a drizzle of lemon vinaigrette. I found my inspiration for my lemon vinaigrette here, and tweaked it by sweetening with honey. You may also want to back off on the lemon juice and add a drop of high quality lemon essential oil.  

Bonus Tip: Quickly “chop” your salad by going to town with your kitchen scissors in your salad bowl.

This next salad, Summertime Kale Salad, is a great mix of kale and spinach (use my kitchen scissor tip to chop these too!), delicious summery fruits, almonds (healthy fat!), and chia seeds (Omega-3s, anyone?). Toss your ingredients lightly and drizzle with a tangy berry vinaigrette.

This Kale Cobb Salad is great for a meal and has enough protein to fill you up and keep you going for a while. Combine kale and romaine and top generously with your favorite garden veggies, some chopped hardboiled eggs, lean turkey bacon, and cheese. Top with a flavorful dressing like ranch or sweet onion to compliment the salad.
